Directions
1. Put whole grain linguini (or pasta of your choice) into heavily salted boiling water. Cook until al dente (approximately two minutes less than package instructions.)
2. While the pasta cooks, start the sauce. Melt 8 tablespoons of butter (one stick) in a saucepan on low heat.
3. As the butter melts, add fresh sage leaves (20 or more to taste). *If you don’t have sage leaves, you can add lemon slices or skip this step entirely.
4. Cook the butter for 5-8 minutes until it’s a light, nutty color. (The butter will have brown flecks running throughout it.) The sage leaves, if using, will crisp up.
5. Drain your pasta, reserving some pasta water in case you need to thin your sauce.
6. Place your cooked pasta in the saute pan, coating it in your brown butter sauce. Add a healthy amount of Parmesean or pecorino cheese
7. Finish with sea salt and freshly ground pepper.
8. Place a heaping portion in your favorite bowl and enjoy.
