Prep the batter
In a large bowl combine the flour, baking soda, eggs, sugar and honey. Mix until mixture is fluffy. Refrigerate for 15-20 minutes until batter is smooth.

Fry the pancakes
On a griddle or large nonstick frying pan heat oil on medium-low. Wipe oil from pan. Use a small measuring cup or scoop to pour the batter into the pan and make pancakes (around 3” in diameter). Flip when surface starts to bubble. Once pancake is cooked transfer to plate to cool and continuing making additional pancakes.

Make a sandwich
Spread red bean paste in center of pancake. Place second pancake on top and there you have it. Yum! Wrap in plastic to keep until ready to eat.
