Just a four hour drive from Mexico City, Acapulco has been a popular beach destination ever since I can remember. Back in the sixties it was so glamorous to vacation in Acapulco that it became the Sister City of Beverly Hills. Nowadays many more wonderful beach towns in Mexico attract American tourists, but Acapulco remains a favorite of Mexico City dwellers. My mom used to make this Shrimp Cocktail as a poolside meal in Acapulco when I was a little girl. I’ve always loved how fresh it is.
